Lina lingered a moment longer, adjusting the tray so it sat securely on his soft, pillowy middle. “Call me if you need anything else,” she said sweetly, before heading back out of the room, leaving him alone with the three thick, golden-brown grilled cheese sandwiches, each one dripping with melted cheese, stacked next to a steaming bowl of tomato soup, thick and fragrant. Lina had even left a pat of butter melting on the top of the soup, its sheen glistening invitingly.
Charlie picked up the first sandwich and took a bite, closing his eyes at the immediate rush of flavor. The cheese was gooey and rich, almost overwhelming, and the bread was perfectly crisped, buttered on both sides. He dipped the sandwich into the bowl, swirling it in the creamy soup before taking another big bite. His stomach, already softened by Lina’s cooking and his sedentary lifestyle, groaned in satisfaction as the food settled into it, adding to the pleasant, familiar weight of fullness.”

Ingredients
2 slices of thick-cut brioche or Italian bread
3 tablespoons butter, softened (plus extra for frying)
2 tablespoons mayonnaise
A pinch of salt
2 slices cheddar cheese
2 slices mozzarella cheese
1 tablespoon garlic powder (optional, for garlic butter flavor)
Directions
In a small bowl, mix together the softened butter, mayonnaise, and a pinch of salt. For extra flavor, add the garlic powder if desired. Spread this mixture evenly on one side of each slice of bread.
On the unbuttered side of one slice of bread, layer the cheese, alternating between slices of cheddar and mozzarella. Then place the second slice of bread on top, buttered side facing out.
Heat a frying pan over medium-low heat and add a little extra butter. Place the sandwich in the pan and cook for 3-5 minutes on each side, pressing down gently with a spatula to help the cheese melt. Keep the heat low to prevent burning and ensure the cheese gets melty and gooey (A lid can be placed over the pan briefly to help the cheese melt more evenly, but be careful not to over-toast).
Once golden brown and the cheese is melted, remove from the pan. Cut in half and serve immediately. Enjoy!
Notes
Cheese Options: Cheddar and mozzarella are a great balance of flavor and meltiness, but you can experiment with other cheeses like Swiss, American, gouda or provolone for extra creaminess.
Butter & Mayo Mixture: The mix of butter and mayo creates an extra crispy exterior. Mayo has a higher smoke point than butter, so it helps prevent burning while adding more flavor!
